I mostly followed this recipe for the Cheddar Jalapeno Cornbread Drop Biscuits, but substituted Jiffy Corn Muffin Mix for the Martha White mix, and added 2 large eggs.
I should have used a bigger baking sheet to avoid the biscuits melding to one another, but they still managed to cook through like they should.
The Jiffy mix has a couple more ounces of product in the package than the Martha White, so that may be why the biscuits seemed a touch dry to me, but delicious nonetheless.
I served mine up with some hatch chili jalapeƱo jam that one of my sisters had given me for Christmas.
