There are lots of variations on pimento cheese recipes. This is one I made today, that I like. As with any recipe, you can vary ingredients to get a taste that you prefer.
Stormdrane's Spicy Pimento Cheese Recipe
1 cup shredded Velveeta
1 cup shredded sharp cheddar
4 oz pimentos (drained)
4 oz Philadelphia jalapeño cream cheese
1/2 cup mayonnaise
1/4 tsp Old Bay seasoning
1/4 tsp garlic powder
1/2 tsp McCormick's Black/Red pepper blend
Combine all ingredients and thoroughly mix with a fork. Chill in refrigerator.
Serve on white bread with dill or bread and butter pickles, use for grilled cheese, wrap with flour tortillas, dip with crackers, add to grits, burgers, hot dogs, so forth, so on, and whatnot...
If you don't want it spicy, just use regular or whipped cream cheese instead of the jalapeño version, same amount, and either use regular black pepper instead of the 'Hot Shot' black/red pepper combo, or leave it out all together. The Old Bay and garlic powder don't add 'heat', just flavor. Some folks might like to add in a little green onion for color and flavor as well.
Recipe is based on what I learned from Ma, and having looked at dozens of other recipes online and in recipe books. Many are very similar with minor tweeks, but I wanted to make mine with a bit of a spicy kick, preferring the jalapeno cream cheese and black/red pepper blend additions.
